Meal prep all’italiana. Il metodo intelligente per organizzare la cucina e preparare più piatti fatti in casa
by Vicario Lo Castro, Emma
It’s the method I’ve developed over the years, studying and experimenting in my own kitchen, when I suddenly found myself catapulted from my hometown of Catania to Austria, without the fresh produce I was used to, without shops open late every day. I was struggling, and from that difficulty was born what I called Italian-style meal prep.
But what exactly is meal prep? First, it’s a system based on two principles: optimizing the time we already spend in the kitchen and preparing supplies in just a few minutes, ready to use when we return after a long day and don’t even have the energy to talk, let alone cook. Why Italian-style meal prep? Because classic American meal prep focuses on preparing a dish, portioning it, and then eating it the same way all week. Let’s face it, not the best thing for us Italians who love good food.
My method, however, is much more flexible because it allows you to prepare and store complete, ready-to-cook meals in the refrigerator or freezer, or simple bases that you can combine however you like on the spot, significantly reducing prep time. Will long sessions in the kitchen be necessary? No, an hour, or even just half an hour, is enough. I’m not asking you to completely overturn your habits, but to understand the process and then adapt it to your needs, your recipes.
The beauty of Italian-style meal prep is that it’s for everyone. For those who already love to cook and those who barely know how to make pasta. For those with special dietary needs. For those who simply want to eat well without spending hours in the kitchen.
